When October hits – I enter cozy mode. Whether it’s the decor in my home or cooking my favorite comfort food, I crave for all things cozy.
That was the theme I was going for in my 2024 Halloween porch decor, but with a touch of spooky. I was inspried by the Halloween vibes I grew up with (in the 90’s!) – fun, welcoming and innocence. In my latest video, I take you step by step as we decorate my porch with old and new Halloween finds.
Don’t forget to stick around until the end… we are cooking the creamiest, most mouth watering risotto you have ever had! And just in time for dinner, we had a cozy rain storm hit which made this warm dinner dish hit the spot. This is a family favorite meal and I’m sharing the entire recipe with you!
Risotto recipe: This only takes about 20 minutes to make 🙌🏻
Ingredients:
Chicken sausage (I used organic chicken apple sausage)
2 cups Arborio rice (the kind you use for risotto!)
Drizzle of olive oil or avocado oil
4 cups chicken broth
6 cloves garlic, minced
1/2 cup canned full fat coconut milk
1 cup grated Parmesan
1 bag spinach
Seasonings: chili flakes, salt, pepper, dried herbs Fresh basil for serving
Cook chicken sausage in pan with oil for 8 minutes. Add Arborio rice and garlic to the pan. Add a little more olive oil and toast the rice for 1 minute. Add the chicken broth, coconut milk, and seasonings. Bring the rice to a boil and then cover and reduce to a simmer.
Cook for about 10 minutes. Add spinach and parmesan. Mix well and serve!!
